Importance Of Good Health







Good health is not only about not being ill, it is about being happy and feeling whole from a physical, mental and spiritual point of view.Being healthy is not anymore just about taking medicines when unwell, it means taking care of ourselves to prevent any illnesses and to change our attitude when we need to heal or get better after the illness. The true definition of good health is much broader than that. Good health means being able to live life to the fullest. It means waking up in the morning in a clear, happy state of mind, with copious amounts of energy and a spring in your step that lasts the whole day. This is living at ones peak!Taking care of our health today means doing a lot of things to feel good, from eating the right way to taking vitamins, from exercising to having a job we enjoy.There is no pain or feeling of stiffness in our body and we are able to exercise freely every day if we wish. Often, when we are in good health it is common to be more active and exercise forms part of the day's activities. When we are free of pain, we are able to do a lot more and we feel motivated to do a lot more than when we are experiencing pain. So maintaining a good level of health is important to our lives because it means the absence of pain totally or at least for the majority of the time.Role of exercise in our life is also important. With age our bodies become inflexible. It is more out of dis-use than wear and tear. The human body requires a certain minimum level of activity. Eat three healthy, well-balanced meals a day (breakfast, lunch and dinner). Always eat breakfast. Some people will skip this meal, but your body needs nourishment and a healthy breakfast can get your body off to a good start each day.Maintaining good health is contingent on the believe that it is possible and on the incentive to make a change in lifestyle choices and few people have the incentive to make those changes. With all that we know aboutthefunctioning of the body and its ability to heal, cure itself and expel toxins, it's a wonder why so many people continue to fall victims to the ravages of diseases brought on by living an unhealthy lifestyle.The health of individual people and their communities are affected by a wide range of contributory factors. People's good or bad health is determined by their environment and situations - what is happening and what has happened to them, says WHO. WHO says that the following factors probably have a bigger impact on our health than access and use of health care services:
Where we live
The state of our environment
Genetics
Our income
Our education level
Our relationship with friends and family
Systematic activities to prevent or cure health problems and promote good health in humans are undertaken by health care providers. Applications with regard to animal health are covered by the veterinary sciences. The term "healthy" is also widely used in the context of many types of non-living organizations and their impacts for the benefit of humans, such as in the sense of healthy communities, healthy cities or healthy environments. In addition to health care interventions and a person's surroundings, a number of other factors are known to influence the health status of individuals, including their background, lifestyle, and economic and social conditions; these are referred to as "determinants of health".Everything we eat does one of two things: it either nourishes us or poisons us. Food that has been over-processed and contains preservatives acts like slow poison. The entire modern food handling process, where emphasis is on long shelf life, is turning our food into poisons. In order to keep the body healthy, it is fundamental to follow a wholesome diet, consisting of fresh vegetable proteins in the form of lentils, beans, milk products, dried fruits and the like. //Besides healthy food, we also need sufficient sleep, fresh air, and proper physical exercise, such as yogasanas or other sports.

Eid al-Adha


Two of the most important Islamic holidays of the year are Eid-ul-Fitr and Eid-ul-Adha. Eid-ul Adha is celebrated on the 10th of the month of Zul-Hijja after pilgrims complete their Hajj to Kabbah and follow the footsteps of Bibi Hajar when she was left in the valley of Mecca with Ismail by Hazrat Ibrahim. Families and Jamat get together to recite the morning prayers and then there is feasting, exchange of gifts and rejoicing.Eid-al-Adha has had other names outside the Muslim world. The name is often simply translated into the local language, such as English Feast of the Sacrifice, German Opferfest, Dutch Offerfeest, Romanian Sărbătoarea Sacrificiului and Hungarian Áldozati ünnep. In Spanish, it is known as the Fiesta del Cordero, the Festival of the Lamb.The history behind Eid-ul-Adha follows the story of the faithful Abraham, who was instructed by Allah in a dream to raise the foundations of Kaaba, a black stone, the most sacred Muslim shrine in Mecca (Saudi Arabia), which the Muslims face during their prayers (salat). Immediately responding to the Lord's call, Abraham set off for Mecca along with his wife and son, Ishmael. At that time, Mecca was a desolate and barren desert and Abraham had to face a lot of hardships. However, he supplicated Allah's commands uncomplaining. In a divine dream, he also saw himself sacrificing his son Ishmael for Allah's sake. When he told this to Ishmael, the latter immediately asked his father to carry out Lord's commands without faltering and assured that he was completely ready to give up his life for God. But miraculously enough, when Abraham was about to sacrifice Ishmael, Allah spared the boy's life and replaced him with a lamb. And this is what Abraham ultimately sacrificed.During the celebration of Eid al-Adha, Muslims commemorate and remember Abraham's trials, by themselves slaughtering an animal such as a sheep, camel, or goat. This action is very often misunderstood by those outside the faith.Allah has given us power over animals and allowed us to eat meat, but only if we pronounce His name at the solemn act of taking life. Muslims slaughter animals in the same way throughout the year. By saying the name of Allah at the time of slaughter, we are reminded that life is sacred. During the festival of Eid-al-Adha, chanting of Takbir loudly before the Eid prayer on the first day and after the Eid prayer on the second and the third day, distributing meat etc form some of the important aspects of the festival.
So let us get an insight into as to why Muslims celebrate Eid-al-Adha/Bakrid, while the country celebrates it.

Sunnah of Eid »
Keeping with the tradition of Prophet Muhammad (saw), Muslims are encouraged to prepare themselves for the occasion of Eid. Below is a list of things Muslims should do in preparation for Eid:

Wake up early.
Offer Salat al-Fajr.
Prepare for personal cleanliness, take care of details of clothing, etc.
Take a Ghusl (bath) after Fajr.
Brush teeth with miswak.
Dress up, putting on best clothes available, whether new or cleaned old ones.
Use perfume or attar (men only).
Have breakfast on Eid al-Zuha before leaving for prayer ground (Eidgah). One can take breakfast after Salaat also or after sacrifice if he is offering a sacrifice.
Go to prayer ground (Eidgah) early.
Offer Salaat-al-Eid in congregation in an open place except when whether is not permitting like rain, snow, etc.
Use two separate route to and from the prayer ground.
Recite the following Takbir which starts from Mughrib on the 9th Dhu al-hijah and last until the Asr on the 12th Dhu al-ilhijah:

Allaho-Akber, Allaho-Akber. La ila-ha ill-lal-lah. Allaho-Akber, Allaho-Akber. Wa-lilahill hamd.

Millions of people spend hundreds of dollars each year on skin creams and other medicines that promise to keep your skin clear of acne. No one wants to look in the mirror and see a big ugly pimple but the sad truth is it has happened to everyone at one point in his or her lives. However, one pimple does not always mean that you have acne. Acne is usually more severe than just one or two unsightly pimples. It is important to know which type of acne that you have in order to get the correct treatment. Below you will find many different types of acne and their descriptions.Acne, or acne vulgaris, is a skin problem that starts when oil and dead skin cells clog up your pores. Some people call it blackheads, blemishes, whiteheads, pimples, or zits. When you have just a few red spots, or pimples, you have a mild form of acne. Severe acne can mean hundreds of pimples that can cover the face, neck, chest, and back. Or it can be bigger, solid, red lumps that are painful (cysts).Acne is very common among teens. It usually gets better after the teen years. Some women who never had acne growing up will have it as an adult, often right before their menstrual periods.How you feel about your acne may not be related to how bad it is. Some people with severe acne are not bothered by it. Others are embarrassed or upset even though they have only a few pimples.The good news is that there are many good treatments that can help you get acne under control.


What causes acne?
Acne starts when oil and dead skin cells clog the skin's pores. If germs get into the pores, the result can be swelling, redness, and pus. See a picture of how pimples form .For most people, acne starts during the teen years. This is because hormone changes make the skin more oily after puberty starts.Eating chocolate or greasy foods may cause some people to break out, but studies haven't proven that eating chocolate or high-fat foods increases the risk of acne. Using oil-based skin products or cosmetics can make acne worse. Use skin products that don’t clog your pores. They will say "noncomedogenic" on the label.Acne can run in families. If one of your parents had severe acne, you are more likely to have it.

Here is some information about the different types of acne:



Acne vulgaris is a common skin disorder affecting at least 85 percent of adolescents and young adults. This disorder is often dismissed by the medical community and general population as a superficial affliction associated with growing up, however scientific evidence has illustrated that the effects of this condition are far more than skin deep. This brief review of relevant scientific literature discusses the potential effect of acne beyond its dermatological manifestations. These include effects on psychiatric health, psychological well-being, and quality of life


Acne Conglobata is a serious form of acne recognized by huge breakouts of connected acne deep below the skins surface. It will usually exist together with other forms of acne, but can be easily recognized by huge, agonizing lumps. Acne Conglobata is much more difficult to control than regular acne and can often periods be much more agonizing and lead to serious scarring harm of the epidermis.


Acne fulminans (AF), also known as acne maligna, was originally described as acute febrile ulcerative acne conglobata (AC). In 1958, at a meeting of the Detroit Dermatological Society, Burns and Colville presented a 16-year-old white boy with acute febrile disease and acne conglobata. Many similar cases have been reported since then.[1] The primary features of this disease include sudden onset, severe and often ulcerating acne, fever, polyarthritis,[2] and failure to respond to antibacterial therapy; the response to debridement in combination with steroid therapy is good. It can be the dermatologic manifestation of the synovitis-acne-pustulosis-hyperostosis-osteitis (SAPHO) syndrome.[3] Acne fulminans is a syndrome of fulminant, necrotizing acne associated with bone lesions, constitutional symptoms, and laboratory abnormalities.Acne fulminans begins as pain and inflammation in the joints. It eventually progresses into a swelling of the lymph nodes located at the base of the neck, causing inflexibility in the neck within weeks after the nodes swell. This swelling will eventually decrease, but this decrease will be accompanied by an increased inflammation and swelling of the joints, as well as a complete loss of appetite, though these symptoms are often ignored. After some time, the disease will cause an extreme loss of weight and atrophy of the muscles, leading to the decline of physical abili

Gram-Negative Folliculitis is inflammation or infection of one or more hair follicles (openings in the skin that enclose hair)Folliculitis develops when bacteria, such as Staphylococcus, or a fungus enters the body through a cut, scrape, surgical incision, or other break in the skin near a hair follicle. Scratching the affected area can trap fungus or bacteria under the fingernails and spread the infection to hair follicles on other parts of the body.Acne can be classified into several categories based on the severity of the condition. The severity of the acne is decided on the basis of two factors and they are the surface area of the acne affected skin and the type of the lesion formed. Gram-Negative Folliculitis is undoubtedly a severe form of acne and the major reason behind this problem is the gram-negative organisms. The word ‘gram’ stands for a blue stain used in laboratories to detect microscopic organisms and the name’ gram negative’ came into existence because a particular type of bacteria cannot be detected by the blue stain.  Those who had complication with acne vulgaris and rosacea are more prone to this type of skin disease.

Acne rosacea is a chronic acneiform disorder affecting both the skin and the eye. It is a syndrome of undetermined etiology characterized by both vascular and papulopustular components involving the face and occasionally the neck and upper trunk.Rosacea is a chronic skin condition that makes your face turn red and may cause swelling and skin sores that look like acne. Clinical findings are usually limited to the sun exposed areas of the face and chest and include mid facial erythema, telangiectasias, papules and pustules, and sebaceous gland hypertrophy. Rosacea is characterized by episodic flushing of affected areas, which may be associated with consumption of alcohol, hot drinks, or spicy foods. During inflammatory episodes, affected areas of the skin, primarily the convexities of the face, develop swelling, papules, and pustules. Rosacea typically begins as redness on the central face across the cheeks, nose, or forehead, but can also less commonly affect the neck, chest, ears, and scalpThe skin lesions are notable for the absence of comedones, which distinguishes this disorder from acne vulgaris. Rhinophyma is a late finding.Pyoderma Faciale is a severe form of acne that is only found in females. It usually presents itself as large nodules that may be painful, sores, and pustules. Pyoderma faciale may start suddenly and only presents itself on the face. It can affect women who have not had any previous acne issues. The treatment for pyoderma facial may include corticosteroid injections and Accutane. This condition may cause severe scarring, especially if left untreated.

IFTAAR COCONUT CRUSTED POTATOES CHICKEN PATTIES RECIPES



INGREDIENTS

1 ounce can mixed white and dark meat chicken, drained
3potatoes, boiled
1 cup dry coconut, grated
1 tbsp lemon juice
2 green chilies, finely chopped
2 tbsp fresh coriander leaves, finely chopped
7cashew nuts
7 raisins
2 tsp red chili powder
salt to taste
2 egg, lightly beaten
oil for frying
METHOD
In a medium bowl, break up the chicken with your fingers until it's finely shredded. Stir in all of the remaining ingredients, except the coconut, until well blended. Divide into 4 equal portions on a wax paper-lined baking sheet. Gently shape into patties with your hands. The mixture will be very soft. Put the coconut in a small shallow dish. Carefully set one chicken patty in the coconut and gently turn over to coat both sides; place back on wax paper. Repeat to coat all of the patties. Chill at least 1 hour. Heat the oil in a skillet over medium heat. Fry the patties 4-5 minutes per side, flipping carefully, until golden brown on each side.

*1 Cups Chicken cubed into 1 inch pieces
*2Tbsp lemon juice
*1/2Tsp Ginger
*1 /2Tsp Garlic
*1/2 Tsp Mixed Herbs
*1/2 Tsp Crushed Pepper
*1/2 Cup Chopped Green onions
*1/2 Cup Boiled Green peas
*1 Tsp Mustard seeds
*Salt to taste
*1/2 Tbsp Oil
*1/2 Chopped Tomatoes for garnish (optional)
*1 Tbsp Mayonaise
    Method
* Mix the chicken chunks in marination of garlic, ginger, mixed herbs, salt, pepper and lemon juice.
*Heat oil a karhai and add put mustard seeds, brown them and add chunks of chicken and fry  and cook till tender. Lastly add the peas and green onions and stir fry for 5mins and mix with  mayonaise and serve ona bed of lettuce garnished with tomatoes (optional).
*You can also take pita bread cut into half and fill the bread halves with chicken and serve

Ingredients:
Boneless chicken    300 gm (cut into cubes)
Raw papaya       1 tbsp (grinded, with skin)
Tikka masala     2 tbsp (heaped)                            
(use it of any brand)
Ginger garlic paste     1 tsp (heaped)
Black pepper powder     1/2 tsp (leveled)
Salt                              1/4 tsp
Eggs (beaten)      1
Bread crumbs         as required
Method
Marinate boneless chicken cubes with tikka  masala, raw papaya, ginger garlic paste, blackpepper, salt,  and leave it for 1 hour. Then insert them on wooden skewers, coat in bread crumbs and dip in 2 beaten eggs and deep fry till light golden.

Bread Cheese Stick Recipe – Chef Shireen Anwar
Ingredients
10 bread, slices
10Mozzarella cheese, cut into finger slices
4 Green chillies, chopped
4beaten Eggs                                                                                  
4 tbsp Onion, chopped                                             
4 tbsp Coriander leaves, chopped
Fresh breadcrumbs as required
Bread Cheese Stick Method
Remove bread slices crust and soak slices in  water.
Then squeeze out water and fill with chopped vegetables, cheese stick and fold in a form of roll.
Beat an egg and dip the roll in breadcrumb for coating.
Chill for half an hour then deep fry the rolls.
Bread Cheese Stick is ready to serve

Recipe Ingredients

1/2 kg Potatoes Peeled Boiled And Mashed                
3 Green chilies
1 inch piece Ginger
1tsp Salt
1/2 tsp All Spice
1/2 tsp Sugar
 2 tbsp Coriander leaves chopped                                                                   
2 tbsp Lemon juice
Ingredients for baghar
1/4 tsp Turmeric
1/2 tsp Mustard seeds
1/2 tsp Chili powder
2 tbsp Oil
Ingredients for Batter
1cup Gram flour
1/4 tsp Turmeric.
1/2 tsp Chili powder.
1/2 tsp Salt.
as required Water to make batter
 Method
Grind together 3 green chilies, 1 inch ginger piece, 1 tsp garlic, 1/2 tsp all spice, 2 tbsp lemon juice, 1 tsp salt and 1/2 tsp sugar into a fine paste with 1 tbsp water, mix this paste into 1/2 kg mashed potatoes with 2 tbsp chopped coriander leaves, now give baghar to this mixture, mix well and make into small balls and then flattened make a thick batter with 1 cup gram flour, 1/4 tsp turmeric, 1/2 tsp chili powder, 1/2 tsp salt and water, dip wada into batter and deep fry them in 2 tbsp hot oil till golden brown, serve with chatni.


Aalo Chana Chaat Recipe by Chef Shireen Anwar
Ingredients
Potatoes boiled and cubed 300 gm
Green chilies finely chopped 8
Chickpeas (chanay) boiled 2 kg                
Coriander leaves choppe2 cup
Sweet and sour dip   2 cup
Crushed red pepper (kuti lal mirch) 1/2 tsp
Salt    1/2tsp
Chat Masala  1/2tbsp
Sugar   1/2tbsp
Ginger finely chopped   3 tbsp
Lemon juice        3 tbsp
Tomato ketchup     3 tbsp
Method:
In a bowl mix together boiled and cubed potatoes, boiled chickpeas, finely chopped ginger, finely chopped green chilies, chopped coriander leaves,  Chat Masala, tomato ketchup, lemon juice, salt, crushed red pepper, sweet and sour dip and sugar. Garnish with coriander leaves and thinly sliced onion.

Ingredients
For beef:
Undercut beef (thinly sliced) 1/2 kg
National tikka boti masala (heaped) 1 tbsp
Green chillies (grinded) 1 tsp
Ginger garlic paste 1 tspSalt 1/2 tsp
Turmeric 1/4 tsp
All spice 1/2 tsp
Raw papaya (heaped grinded) 1 tsp
Yogurt 2 tbsp
For paratha:
Flour 2 cups                                                                                                             
Wheat flour 1 cup
Salt 1/4 tsp
For chatni:
Tamarind juice 1 cup
Salt 1/4 tsp
Chilli powder 1 tsp
Roasted cumin powder 1 tsp          
Sugar 1 tsp
Garlic paste 1/2 tsp
Onion (finely sliced) 1
Method
For paratha:
Sieve together both the flour with salt, knead with water into a medium dough apply little ghee on top.
Leave it aside cover for 1 hour then make into parathas and shallow fry on tawa.
Keep warm until required.
For chatni:
Mix together tamarind pulp, salt, chilli powder, garlic paste, crushed cumin, sugar and use accordingly.
For beef:
Marinate undercut beef with heaped National tikka boti masala, green chillies grinded, ginger garlic paste, salt, turmeric, all spice, raw papaya grinded heaped, yogurt for 2 hours.
Heat oil and add marinated beef.
Cover and cook till tender about 15 minutes.
Mint leaves as required

Ingredients
Potatoes ½ kg ( peeled, boiled & mashed)
Green chillies 3
Ginger 1 piece
Garlic 1 tsp
Salt 1 tsp
All spice ½ tsp
Sugar ½ tsp
Coriander leaves 2 tbsp (chopped)                                       
Lemon juice 2 tbsp
Ingredients for baghar:
Turmeric ¼ tsp
Mustard seeds ½ tsp
Chilli powder ½ tsp
Oil 2 tbsp
Ingredients for batter:
Gram flour 1 cup
Turmeric ¼ tsp
Chilli powder ½ tsp
Salt ½ tsp
Water as required (to make batter)
Method
With 1 tbsp water make the fine paste by grinding together green chillies, ginger piece, garlic, all spice, lemon juice, salt and sugar into a fine paste.
Mix this paste into mashed potatoes with chopped coriander leaves.
Now give baghar to this mixture, mix well and make into small balls and then flattened.
Make a thick batter with gram flour,  turmeric, chilli powder,salt and water.
Dip wada into batter and deep fry them in hot oil till golden brown, serve with chatni.

Ramadan is the holiest of months in the Islamic calendar.Ramadan is the month during which the Quran was revealed, providing guidance for the people, clear teachings, and the statute book. Those of you who witness this month shall fast therein. Those who are ill or traveling may substitute the same number of other days. Allah wishes for you convenience, not hardship, that you may fulfill your obligations, and to glorify Allah for guiding you, and to express your appreciationThus was born the sacred occassion called Ramadan, a month-long period of austerity that sees devout Muslims across the world keep themselves away during the entire daytime, offering prayers and abstaining from almost every kind of enjoyment including drinking and abstaining from sex. For Muslims all over, it is a very special time - of introspection, meditation, self control, charitable activities, spirituality and of course, devotion to God.





Most Muslims who fast in Ramadan focus on the benefits and rewards of it. But in doing so, we often make mistakes that instead of adding to our experience actually detract from it. Mistakes that can make us commercialize Ramadan as so many other religions have commercialized their sacred days. Insha'Allah the following will serve as a reminder to, first, myself and then to all Muslims. May Allah help us in spending our time wisely this Ramadan and help us in avoiding these mistakes. Ameen!The last 10 days of Ramadan are special because during this time, the Muslims indulge in intense prayers with the belief that they’ll get closer to god because of their good deeds, sacrifices, and devotion.According to Quran, the 27th night of the month of Ramadan, known as the Lailat ul-Qadr or the Night of Power, is actually considered to be auspicious than any other night. So, the Muslims spend almost this entire night in prayers.

RAMADAN RECIPE


kala chana recipe
INGREDIENTS-                                      
Kala Chana-3 cup
Tomato chopped-4
Green chillies-3
Ginger-1 inch
Kasoori methi -2 t.s
Chana masala-2 t.s *                                                                          
Garam masala-2 t.s
Coriander powder-1 t.s
Turmeric2 t.s
Red chilli powder-3t.s
Fresh coriander-4 tbls
Lemon juice-2 tbls
Black salt-2 t.s
Salt -2 t.s
Method of kala chana
Soak 3 cup  chana in enough water for atleast 6 hours, it become triple in volume after soaking
If u want to sprout them then soak for minimum 9hours and then drain and keep covered for3 days
Take soaked chana and pressure cook for 7 whistles on medium heat.
Take 3 tbls oil in a pan ,add2 t.s jeera, asafoetida, grated or chopped 2t.s ginger, 2 chopped
green chillies,curry leaves .Stir fry for a while ,now add 2 chopped tomatoes(if you want little  gravy
then add 3,4 tomatoes ) and salt,and cover with a lid
Cook till tomatoes become  soft then add 2 t.s turmeric ,2 t.s black salt, 2 t.s red chilli powder,
1 t.s coriander powder,1 t.s garam masala and 1 t.s chana masala.
Fry for a minute,add boiled chana ,2 tbls of water and  cook for 1 minute or till moisture
evaporate,add 1 t.s lemon juice and green coriander,check the seasoning,add more lemon juice if
required,serve garnished with grated  ginger,green coriender and lemon slice.

Aloo Chop  Recipe




Ingredient:
4 medium potatoes boiled, peeled and mashed
2 medium onion chopped
2" ginger piece
2 green chili chopped
2 tbs mustard seeds
 2 tbs coriander powder                                                                 
2/4 tbs turmeric pwdr
2 tbs chopped coriander leaves
salt to taste
2 cup gram flour ( besan)
2 tbs carrom/ajwain seeds (optional)                                                                
2 tbs turmeric powder
a pinch of soda (optional)
salt to taste
2cup water
Oil for deep frying
Ingredients for Raita
3 Cups Yogurt
1/2 Bunch Spinach
3 Tsp Oil
2 Tsp Black Mustard Seeds
2 Tsp Cumin Seeds
2 Tsp Ground Cumin
2 Tsp Fenugreek Seeds
2Tsp Chili Powder
Salt to taste
Black Pepper to Taste


Method Of Aloochop
1. Grind onion, ginger, green chilli and coriander powder with few spoons of water to smooth paste.
2. Heat4tbs oil in a non stick pan and mustard seeds, let it finish cracking, add above paste and fry
till it gets fry properly and it start smelling nice.3. Add the mashed potato, salt and mix it properly in a medium flame and let it cook for another minute and add chopped coriander leaves and mix it and keep it aside.4. Make balls of the mashed potatoes about the size of lemon and flattened it little bit and keep it aside.5. Prepare the batter by adding all the ingredients under batter and mix well so that no lumps remain and make sure the better is little thick so that it coats the potatoes ball properly.6. Heat the oil for deep frying, take a flat potato ball, deep it in the better and deep fry till golden brown and your delicious Aloo Chop (Bonda) is ready to serve hot with raita



Samosa Recipe

Ingredients
2small onion finely chopped
3 clove garlic crushed
2 small capsicum finely diced
 2 cup green peas boiled                                                                                                     
2 carrot peeled and grated
2 boiled potato finely diced
 2ts curry powder
3 tsp garam masala
Salt according to taste
Black pepper according to taste
300 gm wonton wrappers or samosas wrappers
Oil for frying
For cover:
plain flour (maida) – 2cup
samosa
warm oil –3 tbsp
water to knead dough
method of Samosa cover
Add oil, salt and little water with flour, mix well till crumbly.
Add more water little by little, kneading into soft pliable dough.
Cover with moist cloth, keep aside for 15-20 minutes.
Method of Samosa
Beat dough on worksurface and knead again. Re-cover.
Heat oil in a pan, cook onion and garlic for few minutes, until the onion is soft. Add capsicum, peas,
carrot, potato, curry powder and garam masla.Remove from heat, stir until well mixed.Season with salt and black pepper.Place a heaped teaspoon of vegetables mixture in the center of each won ton wrapper, dampen the edges with water or egg and fold it in half, making a triangle to enclose the filling. Press the edges to seal firmly, forming a little parcel.Deep fry the samosas in hot oil for 5 minutes or until golden brown. Drain on paper towels,Samosa is ready.


Kabuli Chana
Ingredients
Chickpea 2 kg
Onions 5
Tomatoes 7
Pomegranate seeds (crushed finely) 3 tsp
Soda bi-carb a pinch
Salt to taste
Ghee as required
Grind Together:                                                                                            
Ginger 1" piece
Green chillies 3
Turmeric powder 2 tsp
Cloves of garlic4
Coriander seeds 1 tsp
Cumin seeds  1/2 tsp
Kabuli Chana method
Soak chickpeas with 2 tsp soda bi-carb.After 10-12 hours wash out the soda well.Then pressure cook for 2 hour.Cut onions into long, thin pieces.Heat 2/2 tbsp ghee and fry onions to a dark brown.Add the ground spice and finely chopped tomatoes.Cook well till rich in color.Add the crushed pomegranate seeds and stir.Add chickpeas and salt.Cover and cook for another 20-30 minutes.Serve withpuri
